Chicken Sopa
AKA Chicken on the Sofa
1 roasting chicken
2 small cans green chilies
1 can cream of mushroom soup
1 can cream of chicken soup
1 can chicken broth
1 doz. tortillas
1 lb. grated jack cheese
1 lb. grated cheddar cheese
1 can tomatoes
Salt and pepper
Roast chicken. Bone and cut meat into bite size chunks. Put soups, tomatoes, and broth in sauce pan; heat. Cut tortillas in 1” strips and dry in oil until crispy. Drain. Cover bottom of 9” x 13” greased baking dish with half of tortillas, chicken, chilies, salt and pepper, and cheese. Repeat holding cheese. Pour soup mixture over layers. Top with remaining cheeses. Bake at 350 degrees in oven for 30 minutes. Can be made ahead of time and/or frozen. Serves 10 to 12.
Homemade Granola Recipe
4 cups old-fashioned oats
1 1/2 cup sliced almonds
1/2 cup packed light brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup vegetable oil
1/4 cup honey
1 ˝ cup raisins or dried cranberries
1 teaspoon vanilla
Preheat oven to 300 degrees F.
In a bowl mix the oats, almonds, brown sugar, salt and cinnamon. In a saucepan warm the oil and honey. Whisk in vanilla.
Carefully pour the liquid over the oat mixture. Stir gently with a wooden spoon; finish mixing by hand. Spread granola in a 15x10 inch baking pan.
Bake 40 minutes, stirring carefully every 10 minutes. Transfer granola-filled pan to a rack to cool completely. Stir in raisins or cranberries. Seal granola in an airtight container or self-sealing plastic bag. Store at room temperature for 1 week or in the freezer for 3 months.
White Chicken Chili
4-5 lb. chicken (cooked and de-boned)
1 32 ounce box chicken stock
3 cans of white beans undrained
2 cups of salsa
2 tsp. ground cumin
2 Tablespoons chili seasoning
2 cloves minced garlic
1 finely chopped onion
1 10 ounce block of pepper jack cheese, grated—if you don’t like spicy sauces leave out
black pepper and salt to taste
Cook chicken—de-boned and cut in cubes
Add all the other ingredients and cook in crookpot till hot.
Garnish with sour cream and cheese (if desired)
If you like thicker chili you can add 1 cup of finely crushed corn chips
You can serve your chili over yellow rice or just with bread.
For fancy serving hollow out a round bread and serve it the bread.
